Classic Method Sparkling Wine Tasting at a 650 m Alta Langa Vineyard in Cissone

Cissone is one of the highest municipalities in the Alta Langa, and the vineyard sits at 650 metres above sea level. The mountain climate matters at harvest, which falls between the end of August and September: the grapes ripen fully yet keep a freshness that lower vineyards cannot give them. The wine that comes out of it is complex, soft and creamy. The Classic Method sparkling wine is never rushed. It rests on its yeasts for at least 40 months at controlled temperature and is released only when the producers judge it ready. In the glass that means a rich straw yellow colour, a fine perlage, aromas of aromatic herbs and ripe fruit, and a long finish of sweet almond. The visit explains how these bubbles are made and why patience and the right approach decide the result.
